WEDNESDAY I ATE

Breakfast: Granola, cranberry juice
Lunch: Pizza from Amazonas in Oakland. This place is highly recommended by a genuine New Yorker as the best NY style pizza around. It definitely delivered. There was also a certain amount of cookies for a work party.
Afternoon snack: More cookies, including some delicious chocolate chip ones that included spicy pepper and ginger.
Dinner: Leftover chili and rice
Dessert: Coffee ice cream with ganache

TUESDAY I ATE

Breakfast: Granola, cranberry juice
Lunch: Leftover chili with rice and cheddar cheese
Afternoon snack: Cookies from Aroma, Coke Zero

Quick beef chili

Beef chili is one of those meals that you think needs to simmer all day. But it doesn’t have to; in fact, this has become one of our standards that can be made in about an hour, and keeps on giving all week.

The recipe is based, originally on a Smokey Beef and Bacon Chili recipe from Sunset Magazine. Over the years, we’ve tweaked it to make it a bit easier and tastier.

Quick beef chili

A beef chili recipe that's simple, quick, and filling. Great for a crowd, with rich flavors of bacon, beef and spices. Not very hot, but it's simple to increase the spiciness

Ingredients

  • 6 slices bacon chopped
  • 1 onion diced
  • 1 clove garlic diced
  • 1.5 lbs ground beef
  • 1.5 Tbls chili powder
  • 1.5 tsp ground cumin
  • 1.5 tsp paprika
  • 1 tsp cayenne
  • 1 tsp salt
  • 1 can 14.5 oz diced tomatoes
  • 1 can 14.5 oz tomato sauce
  • 12 oz dark beer
  • 1 tsp Worcestershire sauce
  • 1 can 14.5 oz black beans
  • 1 can 14.5 oz kidney beans
  • 1 can 14.5 oz pinto beans

Instructions

  • Saute the bacon for a few minutes until it starts to brown a bit (5 min), then add onion and cook another 5 minutes or until it start to get translucent. Toss in the garlic and cook for 1 more minute.
  • Add the ground beef and brown it for about 5 minutes. Add spices and stir for a minute. Add tomatoes, sauce, beer, and Worcestershire sauce. Simmer for about 30 minutes.
  • Drain and rise the beans and add, then simmer for another 5 minutes.
  • Serve with rice, cheese, sour cream, all the usual fixings. Feel free to add more spice, since this isn't very hot.

Morning Snack: Peanut butter filled pretzels
Lunch: Leftover Mac&Cheese with some veggies on the side
Afternoon snack: Chocolate chip cookie, iced tea
Dinner: Beef chili with rice and cheese
Dessert: Coffee milkshake with ganache. Frankly, the ganache was a little over the top

Breakfast:  Waffles with chocolate chips
Morning Snack:  string cheese
Lunch: cheeseburger and fruits at Alvarado Brewery in Monterey. Really good burger. Fantastic fries
Afternoon snack: kettle chips with sour cream onion dip
Dinner: chicken with lime marinade, spaghetti with pesto, green beans, garlic bread, salad
Dessert: leftover raspberry chocolate cake

Dinner: Thai food from Bua Luang in Albany. Panang beef was especially good. Also a Masman curry
Dessert: Coffee ice cream with some leftover ganache
