Dinner: Leftover corned beef. I souse vide ‘d it in two pouches, so one was unopened. Added some roast potatoes and a green sala

TUESDAY I ATE

Breakfast: Granola, cranberry juice
Lunch: Leftove Zacchary’s stuffed spinach and mushroom pizza
Afternoon snack: Mint M&M’s, Coke zero
Dinner: Corned beef with cabbage. First time making my own corned beef, following the recipe on Serious Eats. I’d tried several times, but always waited until too late before I started looking for pink salt to cure it with. So last year, on March 18, I went and ordered a pound, then added it to my calendar for early March.

The meat was beautifully cooked (I went the sous vide route), though perhaps a bit salty. Tony recommended that I cure it an extra day or two in advance, and then soak it in fresh water to draw some of the salty flavor back out.

The veggies we went with roasting in the oven, which is really the only way I like to eat cabbage.
Dessert: Angel food cake with chocolate frosting and strawberries.

Dinner: Leftover turkey pot pie. Green salad.
Dessert: Leftover angel food cake with chocolate ice cream and strawberries. Life is good.

Morning Snack: Apple
Lunch: Leftover pork pie
Afternoon snack: Candy. Mostly chocolate hearts, though some TJ’s peanut butter cups as well. Coke zero
Dinner: Leftover pork pie. Green salad
Dessert: Ice cream with strawberries

WEDNESDAY I ATE

Breakfast: Grapenuts, cranberry juice. Plus a couple of strawberries. That’s right, it’s mid January, and I’m still getting the occasional strawberry out of the patch. Crazy.
Lunch: Turkey sandwich.
Afternoon snack: Milky way dark. The Halloween candy is starting to run low. Coke zero
Dinner: Black bean soup. Recipe was from Epicurious, and not particularly good… called for 3 cans of broth, which was clearly too much. Ended up pureeing another can of beans, which helped. Also added some Siracha sauce, which also helped.
Dessert: Coffee ice cream with some leftover ganache
