MONDAY I ATE

Breakfast: Oatmeal with nibs and blueberries
Morning Snack: Chocolate covered almonds
Lunch: Leftover polenta stuff
Afternoon snack: Coke zero, more almonds, some leftover candy
Dinner: Pizza (it is Pi Day, after all)… made a sauce in the pressure cooker that was really good. Also saute’d some onions, along with red peppers, frozen corn, and prosciutto made for a good pie.
Dessert: Mini grasshopper pie

Here’s the sauce recipe:
Pressure Cooker Pizza Sauce
Ingredients

Olive oil
1/2 onion, chopped
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1/2 tsp red pepper flakes
5 cloves garlic
2 14 oz cans tomatoes
1 tsp salt
2 tsp sugar
Instructions

Heat olive oil until very hot in pressure cooker, then add onion, basic, oregano, and pepper flakes. Saute 5 minutes then add the garlic for another minute.
Add one can of tomatoes, then drain some juice out of the other can before adding. Toss in the salt and sugar, drop the lid on the pressure cooker, bring it up to pressure and cook for 15 minutes. Depressurize however you like, open lid and hit the stuff with a stick blender. If it’s watery, you could let it simmer some more.
This makes enough for 2 pizzas.

SATURDAY I ATE

Breakfast: Doughnuts. Split a custard bomb with Tessa. Orange juice
Lunch: Sandwich of leftover chicken saltimbocca with cheddar cheese
Afternoon snack: Soft serve ice cream dipped in chocolate. Hello, 4th grade, I missed you. At Lake Anza. Shared with Tessa, and a lot of it dripped on my leg.
Dinner: A serious stroke of brilliance, though this experiment still needs some work. Chicken saltimbocca pizza. Caramelized an onion, with white wine and some lemon juice towards the end. Used that as the base of the pizza, then added the last of the leftover chicken, along with some prosciutto. Topped with grueyere cheese and sage. We ate it with a kale salad with a dressing of lemon juice, lemon zest, and olive oil. While we were eating, we decided that the kale salad was just what the pizza needed on top. Might experiment with this, or might add the kale before baking.
Dessert: Tessa and Suzanne made mint chocolate cupcakes with mint frosting. Awesome! I had two.
