Sunday I ate

Breakfast: Made lemon scones. Basically, the recipe here, but without raspberries. Tessa couldn’t decide on lemon or vanilla glaze, so we made both.
Lunch: Grilled salami and cheese sandwich


Afternoon snack: Hand Pie. Some chocolate chips. Iced Tea
Dinner: Pulled pork. Tried a combination of sous vide and smoker based on Serious Eats. The texture and moisture of the meat was awesome, but it didn’t really pick up much smoke flavor. I used the gas grill with wood chips over the lighted burner on one end and the meat at the other end. Kept the grill temp around 280F. Wood just smoked for a few minutes, then went out. Next time (and there will be a next time for this technique) I’ll try the electric smoker. Two hours smoking. Also made the usual BBQ sauce from APL (Serious BBQ). Suzanne made sweet potato rolls and an awesome vinegar slaw.


Dessert: Vanilla cream pie.

Breakfast: English muffin with cream cheese and strawberries
Lunch: Turkey sandwich
Afternoon snack: Moon pie cookie from the farmer’s market. Coke zero
Dinner: Beef stew. Green salad.
Dessert: Experimental yellow cupcake with chocolate frosting

Breakfast: Hot tea. English muffin with butter and jam
Morning Snack: Iced tea
Lunch: Leftover rice and beans
Afternoon snack: Coke zero. Brie and bread.
Dinner: Buttermilk chicken, roasted potatoes, asparagus, green salad.
Dessert: Apple pie and ice cream

Breakfast: Bacon. Lots of bacon. Also bagels with cream cheese. Hot cocoa.
Lunch: Peanut butter and honey sandwich with Buffalo Bleu chips
Afternoon snack: Mocha Frappuccino (it’s been happy hour pricing for a week). Brie with crackers.
Dinner: Beef tenderloin wrapped in prosciutto. Asparagus. Green salad
Dessert: Grasshopper pie. Chocolate bar.

TUESDAY I ATE

Location: Hogsmead (Universal Studios)
Breakfast: Yogurt and granola parfait, orange juice
Lunch: Shepherd’s Pie and green salad at the Three Broomsticks. Iced tea.
Afternoon snack: Iced butterbeer (yummy! if a trifle sweet). Java Chip Frapuccino. Coke zero.
Dinner: Split a chicken salad at Wolfgang Puck’s in City Walk

MONDAY I ATE

Breakfast: Oatmeal with nibs and blueberries
Morning Snack: Chocolate covered almonds
Lunch: Leftover polenta stuff
Afternoon snack: Coke zero, more almonds, some leftover candy
Dinner: Pizza (it is Pi Day, after all)… made a sauce in the pressure cooker that was really good. Also saute’d some onions, along with red peppers, frozen corn, and prosciutto made for a good pie.
Dessert: Mini grasshopper pie

Here’s the sauce recipe:
Pressure Cooker Pizza Sauce
Ingredients

Olive oil
1/2 onion, chopped
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
1/2 tsp red pepper flakes
5 cloves garlic
2 14 oz cans tomatoes
1 tsp salt
2 tsp sugar
Instructions

Heat olive oil until very hot in pressure cooker, then add onion, basic, oregano, and pepper flakes. Saute 5 minutes then add the garlic for another minute.
Add one can of tomatoes, then drain some juice out of the other can before adding. Toss in the salt and sugar, drop the lid on the pressure cooker, bring it up to pressure and cook for 15 minutes. Depressurize however you like, open lid and hit the stuff with a stick blender. If it’s watery, you could let it simmer some more.
This makes enough for 2 pizzas.

Afternoon snack: Leftover sandwich from AG Ferrari. I don’t know what was in it, but it was good. Diet coke
Dinner: US Senate Bean Soup (from Joy of Cooking) made with leftover ham bone, frozen a while ago
Dessert: Experimental mini chocolate cream pies. We even did a couple of pie-by’s Cute and Tiny!
